Beignets (pronounced ben-yays) trace their roots all the way back to France, where the word simply means “fritter.” When French colonists arrived in Louisiana in the 18th century, they brought with them their love for these fried pastries. In New Orleans, the recipe evolved into the fluffy, square-shaped dough pillows we know today—deep-fried and buried under a snowy mountain of powdered sugar.

Beignets became so tied to Louisiana culture that in 1986, they were declared the official state doughnut of Louisiana. And of course, the most famous place to enjoy them is Café du Monde in New Orleans, where locals and visitors alike have gathered since 1862 to sip chicory coffee and savor fresh beignets.

Disney brought this tradition into their parks to celebrate the spirit of New Orleans. When New Orleans Square opened at Disneyland in 1966, the beignet quickly became a signature snack at the Mint Julep Bar. Later, Walt Disney World introduced them at Port Orleans French Quarter Resort, tying them to the whimsical charm of Mardi Gras. And in true Disney fashion, they added a little magic—shaping them like Mickey Mouse!

🥣 Ingredients You’ll Need

  • 1/2 cup warm water (110°F)

  • 1/4 cup granulated sugar

  • 1 packet active dry yeast (about 2 1/4 tsp)

  • 1/4 cup shortening or unsalted butter, softened

  • 1/2 cup heavy cream

  • 1/2 tsp salt

  • 1 large egg

  • 4 cups all-purpose flour (plus more for dusting)

  • Vegetable oil (for frying)

  • Powdered sugar (lots of it—be generous!)

  1. Activate Yeast – Mix warm water, sugar, and yeast in a bowl. Let sit 5–10 minutes until foamy.

  2. Make the Dough – Add shortening, cream, salt, egg, and half the flour. Mix well. Add the remaining flour slowly until dough pulls away from the sides.

  3. Knead & Rise – Knead dough on a floured surface for 5 minutes. Place in greased bowl, cover, and let rise 2 hours until doubled.

  4. Shape the Magic – Roll dough to 1/4 inch thick and cut into Mickey shapes.

  5. Fry to Golden Perfection – Heat oil to 350°F. Fry beignets for about 2 minutes per side until golden brown.

  6. Dust with Disney Magic – Drain on paper towels, then cover with mountains of powdered sugar.
